I have the Freesat+ with freetime HDR 1010s. It came with a reasonable manual (the same one you can download from the Humax site) But this does not go into detail on some of the settings (standby modes for example). Does anyone know of a detailed instruction manual that also lists all teh different setting options?

There isn’t one. The documentation comes from Freesat. Presumably they didn’t ask Humax to provide detailed documentation.
Ask here what you want to know many of us have had the box since launch so together we know most things about the UI

OK, I used to have a Panasonic Blu-Ray Free sat recorder. On that I had a function that allowed me to skip forward in minute intervals (ie 1min, 2 min etc) it was really handy for tv ads, as we would just selct 4 mins and skip most of teh adverts, is there a quick way with this machine other than fastfwd to skip adverts?
