Just tried iplayer and youtube on my units and all appears to be ok, so first question
Do you have the latest software version 1.01.06 uploaded?
Folders cannot be disabled.
‘one off things’ should not appear in a folder unless of course set as part of a series and is the last episode.
Folders and contents can be deleted via option after pressing opt+ button.
Multiple one offs or folders can be deleted by selecting them first with the red button/

Not sure what the OP’s problem is but I have same youview unit connected to a 2014 Sony TV along with other kit such as HB 1000S, HDR T2, HD T2 – all tuned to same channel, swap between HDMI inputs and sound appears fine to me.
I would hazard a guess that you have tried disconnecting power for a while then reconnect.
HDD issue is the obvious, you could try a disc clean up and/or reformat from the system menu.

To hide channels
In Guide press yellow (edit channels) default pin is 1234 select the ones you want to hide and press yellow again.
For the avoidance of any doubt, have just downgraded a unit:
Using 2.01.05
On Demand via menu will not work.
Showcase should display old version, and all will be ‘no longer available’
901 will only get to iplayer loading screen
903 itv player should work.

This problem is reported now and again, and I do not recall that anyone has ever got to the bottom of it. I’ve tried replicating without success and I know others have as well.
You could try the usual when problems are reported, default reset, ensure only tuned to one transmitter, but I doubt that will help.
Any reason you are setting manual timers and not using the series link option?
