Inactiveanybody have sound issues, once the box a hdr-1100s has been on a while sound keeps jumping in and out

That might be the issue.
Follow this carefully.
Step 1 set up SD channel level from default of 50%.
Turn on your TV and turn down it’s volume so you don’t deafen yourself.
Using the box volume control turn up the Volume to near max. Turn down the TV volume to a normal level.
The box cannot control HD channel volume levels. The volume level is encoded in the Dolby Digital audio data. It can only be altered after the TV has decoded the audio using the TV volume control.
Step 2 make HD channels output the same audio as HD channels
Home – Settings – Picture and Sound – Digital Audio Out – Change from Multi-channel to stereo.
Switch between a HD and SD channel and confirm the volume level is similar.
From then on use the TV remote to adjust the volume or invest in a remote like the Logitech Harmony range that allows you to assign volume adjustments to the TV rather than the box.
Or depending on the remote you have, setup the supplied remote TV button to control your TV just press the TV button to adjust the TV level. Then press the STB button to return to the remote controlling the box.
The manual provides the codes for a large range of TV’s

Has something changed recently as I hadn’t noticed it until I watched a recording of the Only Connect Final from Monday?

It’s always been that way. Pretty well all Humax boxes work this way.
The box volume only works on SD channels. It has no effect on AAC audio (Freeview-HD) or Dolby Digital (Freesat-HD). Most other make boxes have a fixed level audio output for mpeg audio, Humax is variable and defaults to 50%.
Dolby Digital audio has the volume level encoded in the data so cannot easily be varied at source. The volume level has to adjusted after decoding in a TV or AV receiver. Higher end AV receivers have individual base audio levels for each input. With one of these the gain of each input can be adjusted to match other kit.
